  • Cut the beef thinly: Thin slices cook quickly and stay tender.
  • Tenderising the beef: Marinade the beef for at least 10 minutes before cooking. The bicarb in the marinade helps to tenderise the beef, making for a succulent stir-fry.
  • Don’t overcook the soba noodles: They cook faster than wheat noodles, so be sure to keep an eye on them. Rinsing them under cold water also helps prevent them from cooking any further and to stop them from clumping.

Ingredients

  • 500 grams rump beef

  • Marinade
  • 1 tbsp soy sauce

  • 1 tbsp Chinese cooking wine

  • 1 clove garlic, minced

  • 1/2 tsp bicarb soda

  • Sauce
  • 2 tsp cornflour

  • 2 tbsp soy sauce

  • ¼ cup water

  • ¼ cup oyster sauce

  • 2 tbsp Chinese cooking wine

  • 1 tsp dark soy

  • 1/4 tsp pepper

  • 1 tsp white sugar

  • Stir-fry
  • 180 grams soba noodles

  • 1 tbsp sesame oil

  • 1 onion, sliced

  • 150 grams broccoli, cut into small florets

  • 100 grams red capsicum, cut into strips

  • optional toppings: toasted sesame seeds, sliced green onions, chopped red chilli

Directions

  • Slice the beef into 5mm thick and 5cm long strips. If you cut the beef at a slight horizontal angle (rather than straight down), you can make the strips wider.
  • Marinade
  • Combine all marinade ingredients in a small bowl. Add the beef and stir until fully coated. Set aside.
  • Sauce
  • In a small bowl, mix the cornflour and soy sauce until there are no lumps. Mix in the remaining sauce ingredients and set aside.
  • Stir-fry
  • Bring water to the boil in a medium pot. Add the noodles and set the timer for 3 minutes (or one minute less than packet instructions). Drain the noodles once cooked and run under cold water. Set aside.
  • Heat a wok or frying pan on high and add the oil. Add the onion and stir-fry for 30 seconds before adding the beef. Cook stirring for 2-3 minutes. The meat should be browning, but not cooked through.
  • Add the broccoli and stir-fry for a further 60 seconds then add the capsicum and sauce. Cook until the sauce has thickened and the broccoli and meat are just tender. Add the noodles, stir to coat with the sauce and to heat through. Serve with optional toppings if desired.
