Chia Pudding with Strawberries & Almonds

Chia puddings are a great prepare ahead breakfast. Soak the chia overnight and add your toppings in the morning. Voila! Breakfast is ready.
Being nutrient dense, chia seeds are a healthy start to the day. They are rich in vitamins and minerals and high in fibre and Omega-3 fatty acids, just to mention a few.
Chia seeds have a gelatinous texture when soaked in liquid, such as in chia puddings. I understand this texture would not be for everyone. So, if that is you and you still want to get the health benefits of the seeds, why not try them in smoothies, sprinkled over yoghurt or added to a batch of Toasted Muesli before cooking. Chia Pudding Ingredients
Chia Seeds: Located in most supermarkets, these seeds come in both black and white varieties. Yet, apart from the obvious, there is no great difference between the two.
Almond Milk: I use unsweetened almond milk. You can also use vanilla flavoured almond milk or any other variety of milk.
Cinnamon: Exchange the cinnamon for nutmeg or mixed spice or even vanilla extract. The chia seeds go well with any of these.
Toppings: For this particular recipe, I topped the chia pudding with fresh strawberries and banana, raw almonds and honey. If you don’t have strawberries, try another fruit or even frozen berries. Double the amount of banana. I also love mango, nectarines or peaches. Be creative! Use what you have.
