Looking for more delicious, wholesome vegetable soup meals that are easy to make and perfect for any season? You might like to try these (some more vegetarian than others😊):

Comfort Food In A Bowl

Creamy vegetable soup is a classic across many cuisines – European peasant cooking, rustic French dishes, even modern bistro menus all feature their own variations. But this version strikes the perfect balance between light and creamy, yet full bodied… Sounds like a bit of an oxymoron, but the lack of meat keeps it light, while the potatoes give it that full bodied texture.

The addition of sour cream and egg yolk gives the vegetable soup its luxurious texture without the need for flour or heavy cream, making it a little lighter and fresher than many creamy soups. It’s simple enough for a weekday meal but elegant enough to serve at a dinner party with crusty bread and a glass of wine.

Benefits Of Creamy Vegetable Soup

This is a stand out vegetable soup with so many pluses:

  • Budget-friendly – Every ingredient is affordable and readily available.
  • Naturally vegetarian – Great for mixed households or Meatless Mondays.
  • Customisable – You can blend it smooth or leave it chunky; add extra veg or use up leftovers.
  • Comforting and wholesome – There’s a reason this hearty vegetable soup is a favourite in our household, and particularly on a cold night.

Whether you’re cooking for your family or just for yourself, this dish brings comfort without complication.

Vegetable Soup Recipe Ingredients

Here’s a breakdown of what you’ll need and how to make the most of each ingredient:

Onion, carrots and celery: a good base for the soup.

Potatoes, garlic and thyme: these provide body and flavour.

Vegetable stock, egg yolk, sour cream: for a silky and rich texture and flavour.

Pepper: just a touch is usually enough.

Fresh parsley or shallots (for serving): not necessary, but a sprinkling on top brings freshness and colour.

Crusty bread: optional but definitely recommended and at the very least homemade croutons.

How to Make Vegetable Soup

This is a beautifully straightforward vegetable soup recipe that rewards simple cooking with simple, everyday ingredients.

  1. Heat the oil
Start by warming a tablespoon of vegetable oil in your large pot over high heat. You want it hot enough to hear a sizzle when the vegetables hit the pan.
  2. Sauté the base vegetables
Add your chopped onion, carrots, and celery. Cook for about 4 minutes, stirring occasionally, until they begin to soften and the onions go translucent.
  3. Add garlic, potato and thyme
Toss in the garlic, diced potatoes, and thyme leaves. Stir everything together and let the garlic cook for a minute – but don’t let it burn.
  4. Pour in the stock
Add your litre of vegetable stock and bring everything to a gentle boil. Then reduce to a simmer and leave it to cook, uncovered for 20 minutes. You’re looking for the potatoes and carrots to become tender – check with a fork. The liquid should reduce slightly, concentrating the flavour.
  5. Mix the creamy finish
In a small bowl, whisk together the egg yolk, sour cream and pepper. It should be a smooth, silky mix.
  6. Add to the vegetable soup
Once the soup has simmered and the vegetables are soft, stir the cream mixture into the pot. Do this off the heat or on very low heat to avoid scrambling or curdling the egg yolk and sour cream.
  7. Get the texture right
Using a stick blend, gently do short bursts to half of the soup – giving the vegetable soup a semi smooth / semi chunky texture. Alternatively, use a normal blender and blend half of the soup only. Return it to the remaining soup in the pot and stir to combine.
  8. Reheat gently
Bring the soup back to a low simmer, just enough to heat through.
  9. Taste and adjust
Now’s the time to taste. Add salt if needed and adjust the pepper to your liking.
  10. Serve and garnish
Ladle into bowls and top with chopped parsley or sliced shallots for colour and a fresh lift. Serve with warm crusty bread or toast.

Tips For Hearty Vegetable Soup

  • Don’t rush the base: Taking the time to properly sauté the onion, celery and carrots makes a huge difference to the depth of flavour.
  • Egg yolk caution: Always add the sour cream and egg mixture on low heat to avoid curdling. Some recipes suggest to temper cold ingredients by whisking a ladle of warm soup into the mix before adding it to the pot. I don’t find it necessary to do temper for this recipe – pour it straight in and make sure you don’t bring it to the boil.
  • Texture options: You can leave the soup chunky, blend part of it for a semi-smooth texture (this is my preference, and how the recipe is written), or blend it entirely for a velvety finish.
  • Make it a more protein rich meal: Serve with toasted cheese sandwiches, grilled cheese on toast, or toss in a handful of cooked lentils.
  • Bread alternative: Make some garlic & chive damper to go with the soup. Cheese, herb, plain or cheese and bacon (if you’re not after a full vegetarian meal) all go well with the creamy vegetable soup. I like mine slathered in butter 🤤

Substitutions and Variations

This recipe is versatile and easily adaptable to dietary needs or what you have on hand:

Need it gluten-free?
This soup is naturally gluten-free. Just check that your stock is certified gluten-free if needed.

More veg ideas:

  • Add a handful of finely shredded kale right at the end.
  • Stir through some frozen peas or corn with the sour cream.
  • Add extra vegetables like parsnip, sweet potato or pumpkin. Add them when you add the potatotes.

Spice it up:
A pinch of smoked paprika or cayenne pepper can give this vegetable soup a new edge.

Can I Freeze Creamy Vegetable Soup?

Yes, with a few notes.

Option one: Freeze before adding the sour cream and egg yolk. When you reheat, stir through the cream and egg mixture just before serving for the freshest flavour and smoothest texture.

Option two: if you’ve already added the sour cream, the soup may separate slightly when defrosted. It’s still safe and tasty, just reheat gently and whisk or blend, if needed, to bring it back together.

Questions About Vegetable Soup

Can I make it ahead of time?

Yes, like many dishes, vegetable soup actually tastes even better the next day. Store in an airtight container in the fridge for up to 4 days.

Can I double the recipe?

Absolutely. Just use a larger pot and double all ingredients. Make sure to taste and adjust seasoning accordingly. I love to batch cook. It’s not only great for time, but also for your budget and reducing waste – you’re not left with as many leftover veggies.

Can I use frozen vegetables?

Yes, especially for carrots or mixed vegetable blends. Add them straight to the simmering pot – no need to thaw.

What’s the best bread to serve with this?

Anything crusty and warm: sourdough, multigrain rolls, baguette, or even toasted pita or naan. As I mentioned earlier, damper also works well for something different.

How can I use up leftover vegetables?

This soup is ideal for reducing food waste. Got a wrinkly zucchini? A lonely parsnip? The tail end of a broccoli head? Toss them in with the potatoes. Nearly any veg will work here, especially ones that soften well like sweet potato, cauliflower, or even roasted beetroot for a pink twist.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion - finely chopped
  • 2 carrots - peeled and chopped
  • 3 celery stalks - chopped
  • 2 potatoes - diced (approximately 250g per potato)
  • 2 garlic cloves - finely chopped
  • 1 tsp fresh thyme - leaves only
  • 1 litre vegetable stock - salt-reduced
  • 1 egg yolk
  • 100 grams sour cream
  • ¼ tsp pepper
  • fresh parsley or shallots - finely chopped (optional)

Instructions

  • Heat the oil in a large pot over high heat. Add the onion, carrots and celery and sauté for 4 minutes.
  • Stir in the garlic, potato and thyme, cooking for a further minute.
  • Add the stock and simmer, uncovered for 20 minutes. The potatoes and carrots should be tender when tested with a fork and the liquid reduced to below the top of the vegetables.
  • Whisk the egg yolk, sour cream and pepper in a small bowl, then stir into the soup.
  • Remove the soup from the heat. Using a stick blender, do short bursts around the pot to 'half' blend the soup.
You will get a slightly thicker and creamier texture, but will still have chunks of potatoes and other veggies.
  • Reheat if necessary or serve immediately, topped with chopped fresh parsley or shallots and warm crusty bread.
