These Curried Sausage Rolls add a spicy twist to an old Aussie favourite. Bursting with flavour from a blend of spices and a touch of sweetness, they’re guaranteed to be a crowd-pleaser. For another variation on the classic, try my Spiced Sausage Rolls. The fennel and cumin shine in these. They are delicious on their own, but try them with a hint of chilli jam. Delicious! 😋

Curried Sausage Rolls combine the comfort of the traditional version with the vibrant flavours of Indian-inspired spices. The warm notes of turmeric, garam masala and allspice, while paired with the subtle sweetness of sweet chilli sauce and carrot, create a perfect balance of heat and depth. And let’s not forget the crunch of golden puff pastry and the optional nutty sprinkle of sesame or earthy nigella seeds.

Sausage Roll Ingredients

  • Sausage mince: The base of your filling, providing that classic meaty texture.
  • Finely grated carrot: Adds moisture and a hint of sweetness, but also a sneaky serve of veg.
  • Sweet chilli sauce: For a hint of sweetness and a mild kick.
  • Turmeric, garam masala, ground coriander, allspice, salt and pepper: A fragrant spice mix to transform the filling.
  • Ready-rolled puff pastry: Convenient, flaky, and perfect for encasing the flavourful filling.
  • Egg: Lightly beaten to seal the pastry and give it a glossy finish.
  • Sesame or nigella seeds: Optional but highly recommended for added texture and a finishing flourish on the sausage rolls.
  1. Preheat the oven to 200°C | 180°C fan-forced and line a baking tray with baking paper.
  2. In a large bowl, combine the sausage mince, grated carrot, sweet chilli sauce, and spices. Mix well to ensure the spices are evenly distributed.
  3. Lay out your puff pastry sheets and cut each into two rectangles.
  4. Place a log of the sausage mixture along the long edge of each rectangle. Roll tightly to encase the filling, sealing the edge with a brush of beaten egg.
  5. Slice each roll into smaller pieces and place them seam-side down on the prepared tray.
  6. Brush the tops with more egg and sprinkle with sesame or nigella seeds, if using.
  7. Bake for around 20 minutes or until the pastry is golden and the sausage roll filling is cooked through.
  8. Allow to cool slightly before serving.

Ingredients

  • Filling
  • 500 grams sausage mince

  • 1/2 cup finely grated carrot

  • 3 tbsp sweet chilli sauce

  • 1 tsp tumeric

  • 1 tsp garam masala

  • 1/2 tsp ground coriander

  • 1/2 tsp salt

  • 1/4 tsp allspice

  • 1/4 tsp pepper

  • Assembly
  • 2 sheets ready rolled puff pastry

  • 1 egg, lightly beaten

  • sesame seeds or nigella seeds (optional)

Directions

  • Filling
  • Heat oven to 200C |180C fan forced and line a large baking tray with baking paper.
  • Place all the filling ingredients in a bowl and mix until well combined – I use my hand for this, much easier than a fork or spoon.
  • Assembly
  • Lie the puff pastry sheets on a clean work space and cut each in half horizontally. Take one of the halves and brush a long side with the egg.

    Place a quarter of the filling lengthwise down the pastry and press into a long sausage shape. Fold the non-egg side of pastry tightly over the filling and roll to seal with egg-brushed side. Cut each half into 10 equal pieces, approximately 1.5cm wide.

    Place on the tray and brush with the remaining egg. Sprinkle with seeds if using and bake for 20 minutes, or until golden brown.

    Serve with your favourite sauce or chutney.
