Italian pizza muffins bring together pepperoni, Kalamata olives, oregano, tomato and plenty of cheese in a soft, savoury muffin. They have all the familiar flavours of pizza without the dough-making, rolling or inevitable debate over who received more pepperoni.
They’re easy to pack into lunchboxes, serve as an after-school snack or take along to a picnic. They also freeze well, making them useful for mornings when putting together a respectable lunch requires more enthusiasm than anyone currently has. For a larger savoury spread, serve them alongside my mini quiches or cheese and Vegemite scrolls.

Ingredients of the Italian Pizza Muffins Recipe
Plain flour – Provides the structure for the muffins. Weighing the flour will give you the most reliable result.
Baking powder – These muffins need a generous amount of raising agent because the cheese, pepperoni and olives make the batter fairly substantial.
Sugar – A small amount balances the saltiness and acidity without making the muffins noticeably sweet.
Oregano, garlic powder and sweet paprika – These give the batter a warm, pizza-inspired flavour. Sweet paprika adds colour and gentle flavour rather than heat.
Salt – Season lightly, as the pepperoni, olives and cheese already contribute plenty of salt.
Egg – Binds the batter and helps give the muffins structure.
Milk – Loosens the mixture and keeps the crumb soft.
Vegetable oil – Adds moisture and keeps the muffins tender, including after they’ve cooled. Choose a neutral-flavoured oil.
Greek yoghurt – Adds moisture and a slight tang. Full-fat or reduced-fat plain Greek yoghurt will work, but avoid sweetened yoghurt.
Tomato paste – Adds concentrated tomato flavour without making the batter watery.
Grated cheese – Use a good melting cheese such as tasty, cheddar or mozzarella, or combine two varieties. Tasty cheese provides more flavour, while mozzarella gives a milder, stretchier result.
Pepperoni – Dice it fairly finely so it spreads evenly through the muffins and doesn’t leave large oily pockets.
Kalamata olives – Their salty, slightly tangy flavour works well with the pepperoni. Drain them and pat away excess brine before slicing.
How to Make Italian Pizza Muffins
Step 1 – Prepare the oven and tin. Heat the oven to 190°C conventional or 170°C fan-forced. Grease a regular 12-hole muffin tin or line it with paper cases.
Step 2 – Combine the dry ingredients. Sift the flour and baking powder into a large mixing bowl. Add the sugar, oregano, salt, garlic powder and paprika, then stir so the seasonings are evenly distributed.
Step 3 – Mix the wet ingredients. In a separate bowl or jug, gently whisk together the egg, milk, oil, yoghurt and tomato paste. Make sure the tomato paste has broken up rather than lingering as one determined red lump.
Step 4 – Begin combining the batter. Pour the wet mixture into the dry ingredients. Use a wooden spoon or spatula to make four or five broad folding movements. At this stage, the mixture should be partly combined, with some flour still visible.
Step 5 – Add the fillings. Add the grated cheese, diced pepperoni and sliced olives. Fold everything together only until there are no large pockets of dry flour. The batter will be thick and slightly lumpy; vigorous mixing can make the baked muffins firm or rubbery.
Step 6 – Fill the muffin tin. Divide the batter evenly among the 12 holes. Sprinkle the remaining grated cheese over the tops.
Step 7 – Bake and cool. Bake for 18–22 minutes, or until the muffins are golden and spring back when pressed lightly in the centre. A skewer inserted into the muffin crumb should come out clean, although melted cheese on the skewer is perfectly fine. Leave them in the tin for 10 minutes, then transfer them to a wire rack.

Variations and Substitutions
Vegetarian – Leave out the pepperoni and add finely diced roasted capsicum, corn, chopped sun-dried tomatoes or well-drained mushrooms. Keep the total quantity of additions similar so the batter isn’t overloaded.
Olive-free – Simply leave out the olives, or replace them with finely diced capsicum.
Different meats – Diced salami or finely chopped ham can replace the pepperoni.
Different cheese – Cheddar, tasty cheese, mozzarella or a pizza cheese blend can all be used. Very soft or wet cheeses may change the texture of the batter.
Add some heat – Stir in chilli flakes, diced jalapeños or a pinch of cayenne.
Use up small leftovers – A few roasted vegetables, an open jar of olives or stray pieces of cheese can all find a home here. Keep wet ingredients well drained and avoid adding so much that there’s barely any muffin holding them together.
Storing and Freezing Lunchbox Muffins
Allow the muffins to cool completely before storing them in an airtight container.
They can be kept at room temperature for one day in cool conditions, but because they contain meat and cheese, refrigerating them is the safer option for longer storage. Keep them refrigerated for up to three days.
For longer storage, freeze the muffins individually before transferring them to a sealed freezer container or reusable freezer bag. Defrost them in the fridge or lunchbox, then warm briefly in the microwave or oven if preferred.
Tips for Soft Savoury Pizza Muffins
- Have the pepperoni, olives and cheese prepared before mixing the wet and dry ingredients. Once combined, the batter should go into the oven without sitting around.
- Fold the batter only until the last obvious patches of flour disappear. A little flour around the fillings is less troublesome than an overmixed batter.
- Drain the olives well so additional brine doesn’t affect the texture.
- Divide the mixture evenly so all 12 muffins finish baking at roughly the same time.
- Let them stand for 10 minutes before removing them from the tin. Straight from the oven, the crumb and melted cheese are still quite delicate.

FAQs for the Italian Pizza Muffins Recipe
Are Italian pizza muffins a traditional Italian recipe?
No. These muffins are an Italian-inspired savoury bake made with familiar pizza ingredients, including tomato, oregano, pepperoni, olives and cheese.
Can I make Italian pizza muffins ahead of time?
Yes. Bake and cool the muffins completely, then keep them refrigerated for up to three days. Serve them cold or warm them gently before eating.
Can I freeze Italian pizza muffins?
Yes. Freeze the cooled muffins individually, then transfer them to an airtight container or reusable freezer bag. Individual freezing makes it easy to take out only what you need.
Why are my pizza muffins dense?
Dense muffins are usually caused by overmixing the batter or adding too many fillings. Fold gently and stop as soon as the visible flour has been incorporated.
Can I use pizza sauce instead of tomato paste?
Tomato paste is the better choice because it provides concentrated flavour without adding too much liquid. Pizza sauce is thinner and could make the muffin batter too wet.
Can Italian pizza muffins be eaten cold?
Yes. They can be served warm or cold, which makes them particularly useful for lunchboxes and picnics.
