Lemon vanilla cookies are the perfect blend of tangy citrus and sweet vanilla. They’re light, buttery, and irresistible, making them the ideal treat for any occasion – whether it’s afternoon tea, a casual snack or something sweet to end a meal. My Lemon Portuguese Tarts and Orange Choc Chip Cookies are some other tasty citrus treats worth trying.

Are the Lemon Vanilla Cookies Easy to Make?

Short answer? Yes!

Lemon Vanilla Cookies are made by creaming the butter and sugar until light and fluffy. This ensures the cookies have that melt-in-your-mouth texture. Adding egg, vanilla extract and plenty of fresh lemon zest to infuse the dough with flavour. The zest balances the sweetness of the sugar and rich vanilla flavour. Of the flour, baking powder and bicarb soda are to be fully incorporated. However, they go in with my secret ingredient, custard powder! This gives an extra burst of vanilla flavour to the biscuits, while contrasting with the lemon and helping with that perfect texture. Lastly, finish off with a little touch of salt.

These cookies spread, so make sure to separate them on the trays. Roll between 1-2 tablespoons of cookie dough between your palms. A little tip, wet your hands first and they will roll better with less sticking to your hands. For more of a citrus hit, you can sprinkle a little extra lemon rind on the tops of the vanilla biscuits, pressing lightly into the dough, so it doesn’t burn or fall off.

Once all the dough is rolled out, place the trays in the fridge. If your trays won’t fit, you can place the cookie dough balls onto a plate and transfer them to the trays later. Refrigerating the cookies will make sure the butter doesn’t melt too quickly when cooking.

Bake the Lemon Vanilla Cookies until they’re just turning golden at the edges. There are not many better aromas than freshly baking cookies floating through the house! So good in fact, it will be hard to wait an extra couple of minutes for them to cool slightly after taken from the oven.

While great for a quick, last-minute catch up with friends, these lemon vanilla biscuits are also good for a lunchbox treat or a little snack to stop that sweet craving. Their refreshing flavour and combination of lemon and vanilla is simply irresistible.

Ingredients

  • 135 grams unsalted butter, at room temperature

  • 1 cup caster sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tbsp lemon rind, grated

  • 1 1/2 cups plain flour

  • 1/4 cup custard powder

  • 1 1/2 tsp baking powder

  • 1/4 tsp bicarb soda

  • 1/4 tsp salt

Directions

  • Heat the oven to 170C | 150C fan forced and line two baking trays with ovenproof paper.
  • Beat the butter and sugar in a mixer on medium speed for 2 minutes.
  • Add the egg, vanilla and lemon rind and mix again until fully incorporated.
  • Sift in the flour, custard powder, baking powder, bicarb and salt and fold through with a spatula – mix just enough to incorporate all the flour into the mix.
  • Roll the mix into balls, using approximately 1½ tablespoons for each cookie. Pace them on the prepared trays. They spread so sit them approximately 5cm apart. Refrigerate for at least 15 minutes, but preferable 30.
  • Bake for 12-14 minutes – they should be just starting to brown on the edges. Leave them on the tray to cool for 5 minutes before transferring to a cooling rack. Enjoy!
