Chorizo and Red Pepper Pasta is a simple, yet flavoursome dish. Pasta is always a go-to for me when I don’t have a clear idea for dinner. There is always something to pair with this delicious carb. And that’s where this dish comes in. A leftover chorizo sausage, some leftover cream and sour cream and I also ensure there is always a large jar of charred red peppers in the fridge. Throw them all together and I came up with this! Creamy Lemon Carbonara is another one of these ‘throw together’ dishes. Chorizo Pasta Ingredients

Sizzling  chorizo: Spanish chorizo is a spicy pork sausage with a smoky and robust flavour. Chorizo provides a real depth of flavour which requires minimal extra effort – making it an ideal addition to pasta. And it also complements the sweetness of the charred red peppers in this pasta dish.

Vibrant red peppers: With a smoky sweetness, these peppers add a beautiful contrast to the spiciness of the chorizo in this dish.

Creamy sauce: The reduced stock, cream and sour cream, mixed with the oils and flavours of the chorizo, garlic and peppers are a delicious combination.

Al dente pasta: I like spaghetti for this dish, but you can really use whatever is in the pantry. Or try my Homemade Pasta for an extra something special.

Serving

If you don’t mind some extra carbs, serve the Chorizo and Red Pepper Pasta piping hot with some crusty bread. It’s perfect for mopping up any excess sauce.

Ingredients

  • 300 grams spaghetti (or any pasta)

  • 1 tbsp unsalted butter

  • 125 grams chorizo (1 sausage), diced

  • 1 large clove of garlic, minced

  • 1/2 cup dry white wine

  • 1/2 cup vegetable stock

  • 150 grams bottled charred red pepper (capsicum), drained but not patted dry, cut into strips

  • 1 tsp dried oregano

  • 3 green onions (shallots), finely sliced

  • 1/2 cup thickened cream

  • 2 tbsp sour cream (alternatively replace with cream)

  • 30 grams parmesan, grated

  • salt and pepper, to taste

Directions

  • Cook the pasta per packet instructions.
  • In the same pot, over medium-high heat, melt the butter and fry the chorizo for 2 minutes or until starting to brown. Add the garlic and cook for an additional 30 seconds.
  • Add the wine and cook until mostly gone. Add the stock and cook until halved in quantity. Add the red peppers, oregano, cream, sour cream and parmesan. Cook until the sauce thickens slightly.
  • Return the pasta to the pot and stir until the pasta is well coated and the cheese has melted.
  • Season with salt and pepper and serve with extra parmesan if desired.
