Ingredients:

  • raw cashews
  • maple syrup
  • coconut oil, melted or softened
  • desiccated coconut
  • ground cinnamon
  • salt

Instructions:

  1. Preheat the oven
  2. Combine all ingredients
  3. Spread and roast
  4. Cool and Enjoy!

Tips for Perfect Cinnamon Maple Cashews:

  • Even coating: Make sure the cashews are evenly coated with the maple syrup mixture for the best flavour and texture. Stirring them halfway through the roasting process also helps with this.

Ingredients

  • 1 tbsp coconut oil (or olive oil)

  • 2 tbsp maple syrup

  • 2 tbsp desiccated coconut

  • 1 tsp cinnamon

  • ¼ tsp salt

  • 1½-2 cups cashews

Directions

  • Preheat oven to 200C | 180C fan forced and line a baking tray with paper.
  • In a small bowl, combine the oil (see Note 1), syrup, coconut, cinnamon and salt. Add the cashews and stir to completely coat.
  • Spread the cashews on the prepared tray and bake for 5-8 minutes. Leave on tray to cool, before transferring to a serving bowl or airtight container.

  • Note 1: Depending how cold your kitchen is, you may need to melt or soften the oil before combining with the other ingredients.
