Lime Coriander Dressing adds a refreshing flavour, a creamy texture and bold colour to any dish. It is a lovely touch for Spanish or Mexican dishes, working well with both chorizo and corn. Drizzle it over Corn, Halloumi and Chorizo Salad. Spread it over Sweet Corn Fritters. Serve it as a cooling dipping sauce for spicy popcorn chicken. There are plenty of options.

The Lime juice stops the avocado from turning brown. Which helps to keep the vibrant green colour when storing in the fridge for up to a week. This recipe makes approximately one cup of coriander dressing and the leftovers can be stored in an airtight container.

Lime, Coriander and…?

Lime juice: Like the coriander, lime juice lifts any dish. The citrusy lime juice in this dressing provides a zing that complements the coriander and balances out the sweetness of the maple syrup.

Coriander: Such a refreshing herb, that gives a lift to any dish. And it is the backbone to this dressing.

Avocado: For a creamy dressing the avocado is a must. This Lime Coriander Dressing is meant to be more like a thick creamy sauce, rather than a watery, oily dressing. Thin enough to drizzle, but thick enough for it to hold its form. And this is where the avocado comes in.

Olive oil and water: Both are for consistency and you can add less or more to help with the blend.

Maple syrup: While it does help with the blending aspect, the sweetness is actually why I have included the syrup in the Lime Coriander Dressing.

Garlic: Because most things taste better with garlic!

Salt & pepper: At the fear of repeating myself… because most things taste better with salt and pepper 🙂

Ingredients

  • 1/2 avocado, skin removed, roughly chopped

  • 2 cups coriander

  • 3 tbsp lime juice

  • 3 tbsp olive oil

  • 1 tbsp tbsp water

  • 2 tsp maple syrup

  • 1 large clove garlic

  • 1/2 tsp salt

  • pepper, to taste

Directions

  • Blend all ingredients until silky smooth, adding only 1 tablespoon of water to start. Add extra to help with blending or if you would like a runnier consistency.
    Use a blender, food processor, stick blender – anything that will make a super smooth texture.
  • Store any leftover dressing in an airtight container with a piece of plastic wrap immediately on top of the dressing. Keep in the fridge for up to a week.
    The lime and plastic will help to stop the avocado from turning brown.
