Mini Quiche Bites are the perfect finger food. Great for cocktail parties and happy hours alongside my Spiced Sausage Rolls or Succulent Lamb Kofta. They’re also tasty cold, so take some along to the next picnic to share or throw them in the lunchboxes.

While shortcrust is the traditional pastry for quiche, I’ve opted for puff in this recipe. It has proven to be so much quicker, easier and less prone to errors.

If your fridge echoes mine, cheese and eggs are always in supply. Keep some puff pastry in the freezer and these quiche snacks can be whipped up as a last-minute treat.

I have made a few adjustments to the original family recipe. While the original is undoubtedly excellent, my version is more budget-friendly and versatile, adding a modern twist to a classic favourite.

Favourite Quiche Variations

For something a little different, try the below alternative fillings.

Caramelised Onion and Goat’s Cheese Quiche: Omit the chives and mustard. Cook 1/2 a finely diced red onion using oil spray and 1 teaspoon of brown sugar. Push it right to the edge, but don’t let it burn. Let it cool before stirring into the egg mix along with 50 grams of marinated goat’s cheese.

Smoked Mini Quiche: Swap the chives for 1/2 teaspoon of smoked paprika and replace 60 grams of the cheese with Gruyere.

Mini Quiche Lorraine: Stir two diced bacon rashers into the egg mix.

Jalapeño Quiche Bites: Add bottled jalapeños (1-2 slices in each mini quiche) at step 7 of the below recipe, before folding the pastry corners in. Although you don’t stir the jalapeños into the quiche, the flavour infuses throughout the filling.

Ingredients

  • 1 sheet puff pastry, ready rolled

  • 1 egg

  • 3 tbsp thickened cream (see Note 1)

  • 2 tsp Dijon mustard

  • 1 tbsp self-raising flour

  • 1 tbsp fresh chives, chopped

  • ¼ tsp salt and pepper each

  • 125 grams tasty cheese, grated

Directions

  • Preheat oven to 170 degrees Celsius.
  • Remove the pastry from the freezer and set aside to defrost.
  • In a small bowl, whisk together the egg, cream, mustard and flour.
  • Stir in the chives, salt, pepper and cheese.
  • Cut the pastry into 4 even strips. Turn the sheet a quarter turn and repeat with 4 more evenly spaced cuts. You should end up with 16 equal squares (see Note 2).
  • Lightly spray oil on a rounded patty pan. Place one pastry square into each hole and press lightly to touch the sides.
  • Place approximately one tablespoon of egg mix into the middle of each pastry square and fold in the corners towards the centre of each quiche.
  • Bake for approximately 25 minutes or until puffed and golden.

Notes

  • Note 1: If you don’t have cream, substitute for full cream milk.
  • Note 2: If you are using a full-sized muffin tray, cut the pasty into 9 equal squares.
