I love making muffins for a last minute treat. They are so quick and easy to make and you can pretty much take any ingredients in your fridge and pantry to create new and wonderful flavours. It’s also a great way to use up old fruit and vegetables.

Tips for the Best Orange Muffins

  • Fresh Oranges: I much rather using fresh oranges, instead of orange essence. The zest and juice provide an authentic citrus kick, and you can boost the orange rind for an even zestier muffin.
  • White Chocolate: I alternate between white chocolate chips and chopped block chocolate. Both work well and it means I can use what I have one hand. You can even combine the two. Or give milk or dark chocolate a go
  • Don’t Overmix: The yoghurt keeps the muffins moist, but it also helps to keep the muffins light and fluffy. Mix the batter gently and just enough to combine the ingredients. You don’t want to whip all of the air out of the orange muffin mix.

Ingredients

  • 2 1/2 cups plain flour

  • 1 cup white granulated sugar

  • 2 tsp baking powder

  • 1/2 tsp bicarb soda

  • 1/4 tsp salt

  • 2 eggs

  • 1/2 cup orange juice

  • 1/4 cup milk

  • 1/4 cup vegetable oil

  • 2 tsp vanilla extract

  • 1 tbsp grated orange rind

  • 1 cup Greek yoghurt

  • 100 grams white chocolate (chips or block chopped)

Directions

  • Preheat the oven to 220°C | 200°C fan forced and line a large 12-hole muffin tray with casings (or lightly spray with oil).
  • Sift the flour, sugar, baking powder, bicarb and salt in a medium bowl. Using a wooden spoon stir in the eggs, juice, milk, oil, vanilla and rind – as best you can. It will still be a little dry.
  • Gently stir or fold in the yoghurt and chocolate. Mix until it is only just combined. It is ok if there are little streaks of yoghurt still visible. Do not over mix.
  • Divide the batter evenly between the casings and bake for 10 minutes. Reduce the temperature to 180°C | 160°C fan forced and cook for a further 5-10 minutes, or until lightly browned and cooked through. Transfer to a cooling rack and enjoy!
