Spicy Corn Salsa

This corn salsa is zesty with lime juice and holds a kick from the jalapeños - making it the perfect addition to many Mexican style feasts.

Ingredients

  • 4 corn cobs - husks removed
  • 1 small red onion - finely chopped
  • ½ cup coriander - roughly chopped
  • 1 small avocado - finely diced
  • 2 tbsp jalapeños - pickled, finely chopped (or 1 fresh)
  • 2 tbsp lime juice
  • ¼ tsp pepper

Instructions

  • Lightly spray the corn cobs and barbeque until cooked and lightly charred. Set aside to cool.
  • Cut the kernels off the cooled corn and place in a bowl along with the onion, coriander, avocado and jalapeños. Stir in the lime juice and pepper and serve. Serve the salsa with Mexican Beef Bowls!
