Garlic and Thyme Mushrooms are earthy, aromatic and delicious. Mushrooms have the uncanny ability to absorb and enhance the flavours of accompanying ingredients, making them a versatile product in countless recipes. When paired with the vibrant flavours of garlic and thyme, mushrooms transform into a hearty breakfast side, tasty appetiser or delicious accompaniment to many main dishes. Renowned for its bold flavour, garlic adds depth and complexity to this dish. The thyme adds a welcome herby freshness. While the Tamari adds a salty flavour, perfect for this dish. This recipe is also a great way to use up the leftover mushrooms in your fridge.

Serving Options

Vegetarian breakfast: Smash some avocado onto sour dough. Add some crumbled goat’s cheese and top with a generous serve of Garlic and Thyme Mushrooms. Yum!

Not-so-vegetarian breakfast: Add as a side to a café style big breakfast… think bacon, hashbrowns, tomato, eggs and the flavoursome mushrooms.

Hearty chicken lunch: Grill chicken breast fillets or barbeque some chicken kebabs, blanch some green beans and finish with Garlic and Thyme Mushrooms. Healthy and delicious!

Appetising bruschetta: Lightly toast thinly sliced baguette. Spread with goat’s cheese and top with the mushrooms.

Creamy mushroom steak: Add ½ cup cream to the mushrooms after the tamari and simmer for a few minutes. Barbeque steak, cook some greens and top the steak with the creamy mushrooms.

These mushrooms have a bold garlic flavour, freshness from the thyme and a saltiness from the tamari. They are great for breakfast, as a side or for an appetiser.

Ingredients

  • 10 grams unsalted butter

  • 200 grams mushrooms

  • 1 clove garlic, chopped

  • 1 tbsp fresh thyme

  • ¼ cup water, approximately

  • 1 tsp tamari (or soy sauce, if you don’t require gluten-free)

  • salt and pepper to taste

Directions

  • In a small saucepan, melt the butter over medium heat.
  • Add the mushrooms, garlic and thyme and cook for 3-4 minutes – stirring regularly. Add a little water at a time to ensure they don’t stick.
  • Add the Tamari (or soy) and stir until browned. Stir in salt and pepper to taste.

    Try serving on some toasted fresh crusty sourdough with crumbled goat’s cheese.
