This Succulent Lamb kofta is an incredibly easy dish to make and a great alternative to meatballs or rissoles. My meat of choice is lamb, but you can swap for beef or chicken mince, depending on cost and what is available. Or how about a batch of each?

My Spiced Sausage Rolls have similar flavours and they’re great for finger food parties. You could make these koftas alongside some yoghurt dipping sauce as additional party food to the sausage rolls.

Why not make life a little easier and plan ahead. Prepare the kofta mix and freeze it in an airtight container before shaping. Any prep time you can shave off during the week is priceless!

The lamb kofta can be shaped around a skewer, and this can make it easier for cooking on a barbeque or over a flame. However, I prefer to form small, slightly flattened oval shaped kofta without the skewer. Easier to turn into wraps, which is our go to, and quicker to make. Still cook them over a flame, when possible, to absorb that charred, smokey flavour. If you do choose to shape the lamb kofta around wooden skewers and cook over a flame, be sure to soak the skewers in water for 30 minutes first. You don’t want the skewers to catch alight.

The aromatic Middle Eastern spices in these lamb kofta are some of my favourite. They heighten the flavour of the dish, while the touch of citrus brings a nice refreshing edge. Make sure the lamb koft are not overcooked, to ensure they remain succulent.

Serving the Succulent Lamb Kofta

Wraps: Fill Lebanese bread with kofta, hummus, salad and fresh coriander, and try toasting it lightly in a sandwich press. Our household love these.

Rice: Serve warm lamb kofta on a bed of rice with fresh tomato and cucumber salad. Top with a drizzle of Yoghurt and Mint Dressing.

Snack: Eat them hot or cold for a quick afternoon protein fix or take them to your next picnic.

Ingredients

  • 500 grams lamb mince

  • 3 tsp cumin, ground

  • 2 tsp coriander, ground

  • 1 tsp lemon rind

  • 2 cloves garlic, minced

  • salt and pepper

  • 1 tbsp fresh coriander, finely chopped

  • 1 tbsp olive oil (if pan frying)

Directions

  • Mix all ingredients in a bowl with your hands until well combined.
  • With wet hands, roll and press into small sausage shapes, approximately 7cm long (see Note 1).
  • Place on a plate, cover and refrigerate for 30 minutes, longer if possible (see Note 2).
  • Barbeque or grill: Cook on all sides over a medium flame for 6-7 minutes, depending on thickness.
    Pan: Heat oil in a large grill/griddle pan over medium high heat and cook the kofta for 1-2 minutes on each side or until cooked to your liking.
  • To Serve
  • Serve on a wrap with salads or on rice with yoghurt dressing.

Notes

  • Note 1: You want to be firm when rolling the shapes, but don’t compact the mince too much.
  • Note 2: Refrigerating the kofta will help to hold the mince together while cooking. Leaving the kofta in the fridge for at least 30 minutes is preferable and you can prepare up to 24 hours prior to cooking. However, if you are pressed for time, even 10 minutes would be beneficial.
