Growing up, toasted muesli was a staple in our house. It was always homemade and usually served with apricot nectar to replace the milk… Hmmm, a breakfast full of sugar! Not sure how well the apricot nectar would go down now, however my kids would probably give it a go.

Granola and toasted muesli are very similar, with the latter potentially being the healthier option – but it really does depend on the variety.

I tend to change this recipe, depending on what’s in the pantry. Although I usually try to swap like for like – sunflower seeds for pepitas, etc. I sometimes even omit ingredients if it won’t have an overall negative impact on the taste and texture.

Toasted Muesli Toppings and Stuff

You can also get creative with muesli. Why not try something visually appealing, like a less traditional parfait. Layered yoghurt, fruit and toasted muesli in a glass. Or try some of my below go-to breakfasts.

Blueberries & Yoghurt: Serve ½ cup of muesli topped with a scoop of yoghurt and berries.

Yoghurt & Peaches: In a bowl, place 100g natural yoghurt, chopped peach, a sprinkle of cinnamon and 2 tablespoons of muesli.

Original: Try the OG… Serve half a cup of muesli with half a cup of milk.

Fruit & Nut: Mix ⅓ cup of the toasted muesli with cut dried apricots, toasted almonds slivers and sultanas and serve with milk or yoghurt.

Ingredients

  • 4 cups rolled oats

  • 1/2 cup coconut, desiccated

  • 1 cup pepitas (pumpkin seeds)

  • 1 cup sunflower seeds

  • 1 cup sesame seeds

  • 1/2 cup oat bran (optional)

  • 1/4 cup olive oil

Directions

  • Preheat oven to 120 degrees Celsius.
  • Combine all dry ingredients in a large bowl.
  • Pour the oil into the dry ingredients and combine well. Transfer to a large, deep baking dish or tray.
  • Cook for 20 minutes. Remove and stir with a wooden spoon.
  • Return to the oven for a further 30 minutes, stirring at the halfway mark. Make sure it does not burn and remove from the oven earlier if necessary.
  • Serving Suggestions
  • Serve 1/2 cup of muesli topped with a scoop of yoghurt and fresh or frozen berries.
  • In a bowl, place 100g natural yoghurt, one chopped peach (tinned if preferred), a sprinkle of cinnamon and 2 tablespoons of muesli.
  • Serve half a cup of muesli with half a cup of milk.
