Ingredients

  • Topping
  • 1 tbsp caster sugar

  • 1/2 tsp cinnamon

  • Cake
  • 1 1/2 cups plain flour

  • 3/4 cup caster sugar

  • 1 1/2 tsp baking powder

  • 3/4 tsp bicarb soda

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 2 large eggs

  • 3/4 cup sour cream

  • 1/2 cup vegetable oil

  • 1 tsp vanilla extract

  • 2 tsp grated lemon rind

  • 2 large apples, peeled and diced into 1cm cubes

Directions

  • Preheat oven to 180C | 160C fan forced and grease and line a 20cm cake tin.
  • Topping
  • Combine the ingredients in a small bowl and set aside
  • Cake
  • Sift the flour, sugar, baking powder, bicarb, cinnamon and salt into a large bowl.
  • In a small bowl whisk together the eggs, sour cream, oil, vanilla and lemon and pour into the dry ingredients. Add the apple. Using a wooden spoon, stir until all ingredients are just combined.
  • Spread the batter evenly into the prepared tin and sprinkle all over with the topping mix. Using a fork, drag the topping mix through the very top of the cake batter. This will incorporate the topping into the first few millimetres of the batter.
  • Bake for 30 minutes, or until cooked through when tested with a skewer. Remove from the oven and let sit for 10 minutes before transferring to a cooling rack.
