This Raspberry White Chocolate Slice is simply irresistible. The combination of raspberries and white chocolate is a flavour pairing that has stood the test of time. The tartness of the raspberries perfectly balancing the richness of the white chocolate; resulting in a delicious blend of sweet and tangy notes. This slice is similar to a blondie. However, although it is super moist, it is not quite as dense as a blondie.

Raspberries: Use frozen raspberries straight from the freezer. The batter will be become hard to mix, but the raspberries will hold their form – for the most part.

White chocolate: I use white chocolate chips in the raspberry slice, however you can substitute for chopped white cooking chocolate if you prefer.

Fancy them up: For an extra touch of elegance, drizzle a little melted white chocolate over the cooled slices before serving. Only a touch, as you don’t want the sweetness to overpower the balance of the raspberries in the slice.

Ingredients

  • 140 grams unsalted butter, melted

  • 3/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 2 large eggs

  • 1 1/2 cups plain flour, sifted

  • 1 tsp baking powder

  • 250 grams white chocolate chips

  • 1 1/2 cups frozen raspberries

Directions

  • Preheat oven to 175C | 155C fan forced. Grease a 27x18cm slice pan.
  • In a large bowl, mix the butter with the sugar, vanilla and salt. Whisk in the eggs.
  • Stir in the flour and baking powder until mixture is a smooth batter.
  • Add the chocolate chips and once incorporated add the raspberries. Gently fold through until the berries are evenly spread throughout.
  • Scrape into prepared pan, level out and bake for 45 minutes, or until cooked through. Leave in pan to cool for 10 minutes, before transferring to a cooling rack.
