Blueberry Coconut Smoothie

My Blueberry Coconut Smoothie is sweet and refreshing with a tropical hint of coconut. Smoothies are foolproof and the perfect kickstart to a day. Although great in summer, I make smoothies in any season. Serve as a meal, an afternoon snack, and even as a sweet fix. Usually naturally sweetened, smoothies are a far better treat than many other sweet options. Load them with nutrients, and even sneak in some greens and you have a nutrition hit in a delicious glass! My daughter’s Banana Choc Hazelnut Smoothie might not be as nutritious as some of my others, but still delicious 😋👌
A perfect smoothie in my kitchen consists of fruit, something green, protein, a flavour touch (herb, spice, coconut) and liquid. And my Blueberry Coconut Smoothie has all of these things. The combination of ingredients is limited only by your imagination. Raw zucchini, cucumber and even some leafy greens are undetectable in smoothies. What a great way to boost your daily intake of greens, not to mention use up some produce from the fridge.
For a refreshing, creamy mango hit, try my Tropical Smoothie. Use half the amount of coconut milk and turn the smoothie into a delicious smoothie bowl. You can even sprinkle with some Toasted Muesli or fresh chia seeds.
Waste-free Smoothie Suggestions
A smoothie is a great way for promoting a waste-free household. Top up the smoothie with the open carton of coconut milk. Use old fruit that has been left at the bottom of the fruit bowl. Or veggies that are no longer crisp. I cannot count how many times my kids have taken fruit to school, and it is still in their lunchbox at home time. Sometimes they’ll take the same piece again the next day. Usually though, they are kind enough to return the bruised piece in exchange for a new one…!
Can Coconut Milk be Frozen for a Smoothie?
What better way to use up those black bananas and mushy strawberries. Put them directly into a smoothie or in the freezer ready for the blender on another day. Below are some ingredients great for freezing.
Milk: Freeze any leftover coconut or almond milk in ice cube trays and use in your next smoothie.
Fruits: Bananas, berries, pitted cherries, stoned fruit, mangoes, apples, pineapple, avocado, pears, cucumber, zucchini.
Vegetables: Carrots, celery, beetroot, baby spinach, rocket, kale.
Herbs & Spices: Mint, fennel fronds, basil, ginger, tumeric, nutmeg.
