How to make Ginger Chicken Stir-fry
Prep: First things first, the key to a great stir-fry is preparation. Since the cooking process is so fast, having everything chopped, sliced, minced and sauces mixed and ready to go is essential. Slicing the chicken thinly ensures it cooks quickly and remains tender. Also chopping both the chicken and veggies to uniform sizes guarantees them to cook evenly. Make sure any accompaniments for the Ginger Chicken Stir-fry are ready to serve when you are. Serving over rice or noodles? Cook them first. Toast sesame seeds, chop chilli or shallots… you get the picture.
Stir-fry: Start by heating some oil in a wok or large pan. Cook the chicken first, but leave it slightly underdone. It will continue to cook while adding the rest of the ingredients. Add the ginger and garlic to the chicken and stir-fry for 30 seconds – enjoy the aroma! Add the broccoli to the chicken and stir-fry. Then add the sauce, snow peas and cornflour mix – in that order. Stir until the sauce thickens and the chicken is tender.
Eat: Remove from the heat. Serve immediately, while the broccoli and snow peas are vibrant and the rest of the chicken stir-fry is steaming hot.

Ginger Chicken Stir-fry
*Note: Adjusting servings will not adjust the ‘light grey’ quantities
Ingredients
Sauce
- 240 ml chicken stock - or vegetable
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp Chinese cooking wine - Shoaxing
- ¼ tsp pepper
Stir-fry
- 2 tbsp cornflour
- 600 grams chicken breast - cut against the grain into 1cm thick pieces
- 1 tbsp sesame oil
- 1 tbsp ginger - minced or finely chopped
- 2 cloves garlic - minced or finely chopped
- 150 grams broccoli - cut into small florets
- 150 grams snow peas - trimmed
Instructions
- Combine all the sauce ingredients in a small bowl and set aside.
- Combine the cornflour with 1 tablespoon of cold water, adding a little more water if necessary, to form a thin paste. Set aside.
- Heat the oil in a wok or large frying pan over high heat. Add the chicken and stir-fry for approximately 2 minutes.
- Add the ginger and garlic and cook for a further 30 seconds, before adding the broccoli. Continue stirring over high heat until the chicken is just tender.
- Add the sauce, snow peas and cornflour mix and stir-fry until the sauce thickens – it should not take much longer than 30 seconds.
- Remove from the heat and serve immediately with fluffy steamed rice, Baked (Fried) Rice, noodles or simply by itself!
